Peppermint in the limelight

PEPPERMINT
Peppermint - one of those oils with a whole lot of benefits. 

When digested, it promotes healthy respiratory function and clear breathing. When diffused, it can boost energy and alleviate anxious feelings. When used topically, it can stimulate circulation and relieve head tension and muscle fatigue OR cool your jets when you need that relief fast. I particularly love it when I am feeling too much tension from sitting indoors when all my people are outside having fun. Or feeling "computer shoulders" and it's creeping up the back of my neck to cause problems. 

This leaping season of spring, give the gift of peppermint by making these yummy chocolate brownies. They’ll curb your sweet cravings, boost protein, and give you all the added benefits of Peppermint oil. 

Bonus! Kids (even the big ones) love them, and you don't need any added sugar for this minty splash with the chocolate!

Healthy Peppermint Black Bean Brownies
Peppermint black bean brownies are a delicious and nutritious twist to a traditional chocolate brownie. You might be nervous about baking with black beans, but don't be—they have a very mild flavor and are extremely rich, creamy, and full of protein. Peppermint boosts the flavor of your brownie with a nice twist on this rich classic!
What you'll need: 
1 (15 ounce) can black beans, drained and rinsed
2 large eggs
¼ cup cocoa powder
⅔ cup honey
⅓ cup coconut oil
½ teaspoon baking powder
Pinch of salt
2–4 drops Peppermint oil
¾ cup chocolate chips, divided (I use dark to avoid dairy)

How to do it:
  1. Preheat oven to 350° F.
  2. Place all ingredients, except for chocolate chips, in blender or food processor and blend until smooth.
  3. Pour batter into large bowl and stir in ½ cup chocolate chips.
  4. Pour into greased 8x8-inch pan and top with ¼ cup chocolate chips.
  5. Bake 30–35 minutes or until toothpick comes out clean.
